There is no this setting on Teamviewer, but  you can try"Tray Manger 2", and "magic Tray". They can help you to hide icons on system tray.

Use HideIt to hide TeamViewer icon? HideIt is a utility that makes desktop level security and privacy very convenient in all situations.

You can use it to hide sensitive data or programs on your desktop when you leave your computer unattended, or you can quickly hide programs when someone comes within eyeshot of your desktop.

Either way, HideIt makes privacy a lot easier to achieve. Or this registry trick: Tray Icons Be Gone

It is easy !
Find your software at HKEY Current User there...should be got a name ShowTrayIcon. just edit the value data from 1 to 0... or maybe left it empty ..after that you need to restart the PC. Answered Dec, 13 2010

First, right-click on the Taskbar and choose Properties.
On the Taskbar tab at the bottom, you’ll see an option to Hide inactive icons. Well, if you want anything to be hidden, you first need to make sure that the checkbox for that option is checked!
Go ahead and click the Customize button to bring up the Customize Notifications dialog box:
Now you can scroll through the list of programs and choose from three options: Hide when inactive, Always show, or Always hide.
Go ahead and choose Always hide for anything that you don’t care to see at all and choose Hide when inactive for items that you only want to appear when an action is being performed. For example, the new mail icon for Outlook can be set to Hide when inactive, which means it will only appear when you get a new email in your Outlook Inbox. Answered Feb, 05 2011
